Russian researchers develop next-generation healthy sweets

Medicinal microalgae to be added to marshmallows and fruit jellies

At Omsk State Technical University (OmSTU), a partner of TV BRICS, researchers are developing innovative confectionery products that retain their familiar taste while offering enhanced nutritional value. The new recipes for marshmallows, fruit jellies, and pastilles are based on the microalga Limnospira fusiformis.

Thanks to this blue-green filamentous algae, the treats are enriched with essential micronutrients such as vitamins, antioxidants, and proteins. This approach enables the creation of sweets that help address nutritional deficiencies and support immune health.

The project was initiated by Anastasiya Polyakova, a student at OmSTU’s Faculty of Art and Technology, who notes that the development process has taken several years.

“It’s incredibly rewarding to know that my work not only helps me earn my degree but can also bring real benefits to society. Our goal is to improve quality of life through healthy eating by creating products people will genuinely enjoy,” Polyakova said.

The research includes not only the formulation of recipes but also testing how well the nutrients are absorbed by the body. These functional sweets are expected to appeal to consumers who prioritise balanced, health-conscious diets.
