    銆€銆€The 5th annual Time Out Beijing Food Awards were held a couple of weeks ago and, as always, have set the culinary standards for the year. Winning one of these awards gives restaurants international recognition and marks the current trends in the food industry. One such trend was highlighted this year by adding an award that recognizes sustainable dining.

    銆€銆€The winner of the inaugural award was Yi House, a European bistro that serves as the restaurant in the Grace hotel on the edge of hip 798. By definition, a bistro should concentrate on the taste and quality of the food, it should be served in a simple manner with the experience allowing the food to be tasted as it is. It was this philosophy that led Grace Beijing's General Manager, Yves Godard and Chef Christian Hoffman to try and make their menu increasingly organic. I went to chat to them about their food philosophy and the future of sustainable dining.
