Image taken on Aug. 26, 2015 shows a woman serving a soup made with quinoa, at San Roque Market, in Quito, capital of Ecuador. Quinoa, a species of goosefoot, is a grain crop grown primarily for its edible seeds. The undemanding and altitude-hardy plant, originally grown in Bolivia, Ecuador and Peru, has a planting history of 5,000 to 7,000 years. Scientific research shows quinoa has great nutritional value. It is high in essential amino acids, minerals, vitamins and good fatty acids, and can boost immunity. The United Nations declared 2013 the International Year of Quinoa to recognize its nutritional, ecological and economic benefits. (Xinhua/Santiago Armas)
